Why is water an excellent solvent for most ionic and polar covalent but not for nonpolar compounds?

It is a case of like dissolves like. Water forms hydrogen bonds, as do polar covalent compounds. Nonpolar compounds do not form hydrogen bonds. Water dissolves materials which can form hydrogen bonds, but not materials which don't. Water can dissolve ionic compounds because it can form hydrogen bonds with ions.
